Kid-friendly, nutritious, and easy to make!


Rice Pudding
1-3/4 cups milk
1/2 cup quick-cooking rice
2 Tbsp. sugar
2 Tbsp. rasins
1 egg
1/4 teaspoon vanilla

Combine first 4 ingredients in a medium saucepan over medium-high heat.  Bring to boil, stirring constantly.  Reduce heat and simmer 6 minutes, stirring occasionally.  Beat egg and vanilla in a small bowl.  Slowly pour into pan, stirring constantly.  Cook on low until thickened.  Let stand for 30 minutes.


Energy Bars
8 oz. bag of almonds
1/4 cup sesame seeds
1-1/2 cups quick oats
1/2 cup milled flaxseed
1/2 cup dried cranberries
1 cup dried blueberries
2/3 cup maple syrup
1 teaspoon cinnamon

Grind almonds in a food processor for a minute or two.  Combine with all ingredients in a large bowl and stir well.  Press mixture into a 9-inch pan greased with canola oil and bake at 275° for an hour.  Cool completely before cutting.  
Make a couple batches and freeze for a handy, healthy snack!


Pudding Pops
1 pkg. instant pudding
2 cups cold milk
1/2 cup whipped cream

Beat pudding and milk for 2 minutes.  Fold in whipped cream.  Spoon into small paper or plastic cups.  Insert wooden popsicle stick into each.  Freeze until firm.  Run under warm water to remove from cup.  Enjoy!
